Ingredients

1 cup powdered sugar
3/4 cup almond flour
2 large egg whites, at room temperature
1/4 cup granulated sugar
Pinch of salt
Pink gel food colouring (optional)
1/2 cup unsalted butter, softened
1 1/2 cups powdered sugar
2 tablespoons brewed Rooibos tea, cooled
1/2 teaspoon vanilla extract

Step by Step Instructions

Step 1
Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
Step 2
In a bowl, sift together the powdered sugar and almond flour. Set aside.
Step 3
In a separate mixing bowl, beat the egg whites on medium speed until frothy. Add the granulated sugar and salt, and continue beating on high speed until stiff peaks form.
Step 4
Gently fold the dry ingredient mixture into the egg whites until well combined. If desired, add a few drops of pink gel food colouring and gently fold until the desired shade is achieved.
Step 5
Transfer the batter into a piping bag fitted with a round tip. Pipe small rounds onto the prepared baking sheet, leaving some space between each macaron shell.
Step 6
Tap the baking sheet gently on the counter to release any air bubbles. Let the macarons sit at room temperature for about 30 minutes to form a skin on the surface.
Step 7
Bake the macarons in the preheated oven for about 15-18 minutes, or until the shells are set and slightly firm to the touch. Remove from the oven and let them cool completely on the baking sheet.
Step 8
While the macaron shells are cooling, prepare the filling. In a mixing bowl, beat the softened butter until creamy. Add the powdered sugar, brewed CBD Rooibos My T, and vanilla extract. Beat until well combined and smooth.
Step 9
Match the macaron shells in pairs of similar size and pipe or spoon a small amount of filling onto the flat side of one shell. Sandwich it with another shell of similar size.
Step 10
Place the filled macarons in an airtight container and refrigerate for at least 24 hours before serving. This allows the flavours to meld and the macarons to develop their signature texture.
