About this Recipe

Chai is a superfood, known for being a great source of antioxidants. This delicious pudding is the perfect way to start your day, or to take away any of your sweet tooth cravings this summer!

Ingredients

3 My T rooibos tea bags
1 teaspoon of vanilla essence
Honey (if sweeter is preferred)
2 teaspoons of finely grated lemon rind
200ml of boiling water
2 cups of plain unsweetened double cream yogurt
â…“ cup of chia seeds
½ a teaspoon of ground cinnamon
6 – 8 small strawberries
Garnish (Optional): Mint leaves, toasted flaked almonds/coconut and more berries

Step by Step Instructions

Step 1
Place tea bags, vanilla and lemon rind in a jug. You can also add honey if you prefer a sweeter pudding.
Step 2
Add boiling water, stir through and draw to a strong tea. Then allow to cool completely.
Step 3
Remove tea bags and stir the cooled, seasoned tea into the yogurt.
Step 4
Add the chia seeds and cinnamon and mix well.
Step 5
Spoon the rooibos mixture into individual glasses or serving bowls (about 160ml per portion).
Step 6
Allow to set for about 30 to 45 minutes in the fridge.
Step 7
Meanwhile, blend the strawberries to make a purée.
Step 8
Just before serving, spoon the strawberry purée over the chia puddings. Garnish with mint, toasted almonds or coconut and more berries. Relax and enjoy!
