Ain’t no berry like a strawberry tiramisu! Give this delicious rooibos and strawberry tiramisu recipe a try and taste the magic!

Ingredients

Strawberry Juice
2 cups chopped strawberries (332 grams)
1 teaspoon lemon juice
1 tablespoon sugar
1/2 cup brewed rooibos My T (118 grams)
1 pasteurized egg* optional
1 cup mascarpone (225 grams)
1 cup whole cream (220 grams)
1 1/2 tablespoons powdered sugar (sifted)
+- 30 Bakers Boudoir Original Finger Biscuits (or other proffered biscuits)
1 cup sliced strawberries (166 grams)

Step by Step Instructions

Step 1
Brew 1/2 cup of My-T CBD Rooibos.
Step 2
Clean and chop the strawberries into small pieces and sprinkle with sugar.
Step 3
Place strawberries, lemon juice and My-T in a blender and blend until smooth.
Step 4
Pour into a bowl and set aside.
Step 5
In a medium bowl beat the egg (if using) for approximately 30 seconds.
Step 6
Add the sugar, mascarpone and cream and beat on medium until thickened (approximately 5-10 minutes, you don't want it to be too thick or too thin, nice and creamy).
Step 7
In a small bowl add half the strawberry juice to start, dip the finger biscuits in the juice (turning to coat all the cookie with juice, but don't leave them submerged in the juice)
Step 8
Arrange cookies on bottom of baking dish and cover with half the cream mixture.
Step 9
Cover with the sliced strawberries, repeat cookies for another layer and cover with remaining cream mixture.
Step 10
Refrigerate for at least 4-5 hours or even overnight.
Step 11
Top with fresh strawberries before serving.
